Grilled Veggie Cheese Sandwich Recipe

Try this healthier version of an all American favorite: grilled cheese. Serve this tomato, fresh spinach and melted cheddar cheese sandwich paired with tomato soup for lunch or light supper.

Ingredients

    • 8 slices light whole wheat bread
    • 4 tsp olive oil
    • 1/2 tsp garlic powder
    • 4 oz reduced fat cheddar cheese
    • 1/2 cup baby spinach leaves
    • 4 slices of tomato (1/4-inch thick)
    • 1 small onion, sliced

Preparation

    • Brush one side of each slice of bread with olive oil. Sprinkle bread with garlic powder. Layer 4 slices of bread with cheddar cheese, spinach leaves, tomato and onion. Top with remaining slices of bread, oil side up.
    • In a grill pan, coated with nonstick cooking spray, grill sandwiches over medium heat, turning once, until golden brown and cheese is fully melted.
