Oven Roasted Ratatouille with Summer Vegetables Recipe

Eat more vegetables. That's easy advice to follow, especially with this delicious recipe. This ratatouille may be made one day in advance, kept covered and chilled, and reheated before serving.

Ingredients

    • 3 tsp olive oil
    • 4 garlic cloves, peeled and chopped
    • 2 sprigs fresh rosemary
    • 1 strip (3 x 1/2 inch) orange zest
    • 1 large onion, sliced
    • 2 large red bell peppers, cut into 1-inch pieces
    • 1 medium eggplant, peeled and cut into 1-inch cubes
    • 1 medium zucchini, cut into 1-inch cubes
    • 1 can (8 oz) no-salt-added tomato sauce
    • 2 cups plum tomatoes
    • 1/4 cup orange juice
    • 1/3 cup chopped fresh basil
    • 1/4 tsp black pepper

Preparation

    • Preheat oven to 350°.
    • In a large skillet, heat oil over medium heat until warm. Add garlic, rosemary and orange zest and cook about 3 minutes. Add onion, bell peppers, eggplant and zucchini and stir to combine.
    • Transfer vegetable mixture to a large baking pan and cover with foil. Bake for 15 minutes, or until vegetables soften.
    • Remove from oven. Stir in tomato sauce. Bake, uncovered, until warm, about 5 to 10 more minutes.
    • Remove from oven and stir in tomatoes, orange juice, basil and black pepper. Cover with foil, return to oven and bake for 10 minutes.
    • Remove from oven. Discard rosemary and orange zest and serve.
