Pulled Pork and Broccoli Rabe Sandwich Recipe

Heart Healthy Recipe
Move over, ham and cheese. This pulled pork sandwich recipe from Philadelphia pairs tender pulled pork with a low sodium BBQ sauce. Broccoli rabe is full of Vitamin K, which helps strengthen bones.

Ingredients

    • 1 pound pork loin
    • 1/2 cup BBQ sauce (see our low sodium BBQ sauce recipe)
    • 4 cups broccoli rabe
    • 2 tsp olive oil
    • 3 garlic cloves, minced
    • 4 1-ounce slices provolone cheese
    • 4 3-ounce crusty whole wheat rolls

Preparation

    • Preheat oven to 425 degrees.
    • Spray a shallow pan with cooking spray. Braise pork loin in pan over medium high heat. Rotate so all sides are browned. Transfer to baking pan and cover with aluminum foil. Bake for about 20 minutes.
    • Allow pork loin to cool (5 to 10 minutes). Using 2 forks, shred pork completely. Toss with BBQ sauce, coating evenly.
    • Wash broccoli rabe and chop. Discard any stems that seem tough. Saute broccoli rabe, olive oil and garlic cloves, until rabe is tender. Stir to cook evenly.
    • Mix rabe and pulled pork. Cut rolls along one edge. Add provolone cheese and top with pork-rabe mixture. Serve hot.
