Black Bean Burrito Recipe

Heart Healthy Recipe
Triple this recipe and make it up to a day in advance for a party-pleasing entrée. The secret to these burritos is blending half the beans to create the thick and hearty consistency of refried beans.

Ingredients

    • 1 can (15 oz) no salt added black beans, rinsed and drained
    • 1 cup frozen whole-kernel corn, thawed
    • 2 green chili peppers, deseeded and chopped
    • 1/2 cup fat free sour cream
    • 4 whole grain tortillas (8-inch diameter)
    • 1 cup bottled salsa
    • 1/2 cup shredded reduced fat Monterey Jack cheese

Preparation

    • Preheat oven to 350°.
    • Place half of beans in a food processor; process until finely chopped. In a large mixing bowl, combine remaining beans, corn, peppers and sour cream. Add chopped beans and stir to combine.
    • Lightly coat an 8 x 8-inch baking dish with nonstick cooking spray. Spoon 1/2 cup bean mixture down the center of each tortilla. Roll up tortillas; place, seam side up, in prepared baking dish. Spread salsa over tortillas; sprinkle with cheese. Bake for 30 to 35 minutes, or until thoroughly heated.
